Queso Rustico

Fresh Cow’s milk is used to make this washed rind cheese made in 10” wheels. The milk is pasteurized and gently soured using 2 kinds of cheese starters. Medium sized soft curd in scalded to get a firmer cheese typical in medium sized to big wheel cheeses. Brine solution is used to wash the wheel and this cheese is characterized by a hard outer rind which hides an aromatic golden pate. Affinage of 90-120 days
