French Beans with Bacon & Cream
INGREDIENTS
12 ounces french beans
2-3 ounces bacon, chopped
1 ounce butter or margarine
1 tablespoon all-purpose flour
11/2 cups milk and light cream, mixed salt and freshly ground black pepper
- Preheat the oven to 375°F. Trim the beans and cook in lightly salted boiling water for about 5 minutes until just tender. Drain and place them in an oven proof dish.
- Dry-fry the bacon until crisp, chop into small pieces and stir into the beans.
- Melt the butter or margarine in a saucepan, stir in the flour and then add the milk and cream to make a smooth sauce. Season well with salt and pepper.
- Pour the sauce over the beans and carefully mix it in. Cover lightly with a piece of foil and bake in the oven for 15-20 minutes until hot.
