Ingredients
2 cups All purpose flour
1/2 cup Butter, cold and cubed
1 Egg
1/2 cup All purpose cream, cold
1 T Baking powder
1/4 cup White sugar
1/2 t Salt
50g Capriccio, crumbled
1/4 t Rosemary
Preheat oven to 180C. Sift flour and baking powder. Incorporate butter until mixture looks like wet sand. Work quickly so the butter doesn’t melt. Add sugar, egg, and cream. Fold in cheese and rosemary (use fresh for stronger flavor). Roll out dough onto floured surface. If the butter melts, refrigerate dough until firm. Flatten to a half inch thickness, then fold 2 sides in like a letter. Flatten and repeat then cut into desired shape. Top with rosemary and freshly cracked black pepper. Bake for 12 to 15 minutes or until golden.
